因此不論原料或成品在製造、倉儲、運輸、銷售、消費均需保持在低溫
狀態下以維持生鮮度。而冷凍食品的品質優劣與冷凍倉儲內的氣流場及
溫度場有著密不可分的關係,因此如何描述和預測冷凍倉儲內的流場便
顯得相當重要。
本研究以實驗量測與電腦模擬兩種方法來探討大型冷凍倉儲(其倉儲大小為21m×2.45m×5.0m )的流場特性,研究中由於本實驗倉儲較大,故在量測上將其分為三個截面來量測,實驗使用熱敏電阻式風速(Thermistor-based anemometer )及熱電偶溫度計(Thermocouple )來量測倉儲中的氣流風速與倉儲內溫度變化。結果發現大型冷凍倉儲風管系統出風口之高風速與高紊流現象,進而提升庫內氣流混合效應,達到較
佳之均溫性。再以PHOENICS 軟體建立倉儲內氣流模式,詳細探討冷凍倉儲內的氣流變化,其中針對倉儲內不同的貨物擺設位置,貨物的擺設大致分為空庫、一層貨物、兩層貨物、滿庫等不同情形來分析當貨物擺設位置不同時,其氣流場的分佈情形。數值模擬的結果顯示在大致上的流場趨勢是符合的。目前的研究結果對冷凍倉儲內氣流動態的了解上有很大的意義,更期望此一研究(低溫倉儲庫內的溫度場與流場的了解),能作為往後在低溫倉儲領域設計與使用上的參考。
